Anyone
who knows North Carolina barbecue knows Lexington
NC. Way back when, people used to gather at the
County Courthouse in Lexington whenever the circuit judge
came to town. We're talking hungry people.
Barbecue eating people. Come court week,
Lexingtonians fired up their smokehouses and started
serving their
version of barbecue on the square. Soon enough
justice took second place to barbecue and people headed to
Lexington for their barbecue every day. Nowadays
Lexington Barbecue #1 is the place to head when heading to
Lexington. On a bad week they'll serve 3 tons of
barbecued pork shoulder. Their best week ran 15 tons
of shoulder. Lexington
Barbecue #1 serves their pulled pork sandwiches with red
slaw, a bit of the sauce is added to the slaw. For
desert, piping hot peach cobbler every day but
Friday. On Friday, berry, berry cobbler.
