There are two approaches to grilling the meat for a cheese steak - leave it sliced or chop it up on the grill.  Chubby's starts with choice rib eye steak and chops it, working the cheese and fried onion all through the meat and the sandwich.  It works.  One of the best cheese steaks in Philadelphia.  French fries were kind of limp though.
