"You should have
ordered ribs, that's what we're known for." I had
told Carl the Pork Sandwich was mighty good.
Moist, plenty of brown ends. A vinegary sauce.
Then I saw a plate of ribs and knew what Carl meant.
I'll be back.
Had room for a bowl
of homemade blackberry cobbler. Glad I did.
That's the old pink
smokehouse next to the restaurant. Nowadays the
smoking happens in a gas fired contraption. Does a
great job and Carl swears he'd have closed the place a
few years ago if he had to spend another July shoveling
hickory coals. He pours in some sauce and wraps
the meat in foil when it's just about cooked and
finishes it off with the sauce sealed in. Barbecue
pit bosses won't agree, but to my taste it works as good
as hickory.
