My first ever Texas Brisket in Texas. I can't see myself ever ordering barbecued brisket anywhere else.
Louie Mueller Barbecue makes there own sausage - traditional, chipotle and jalapeno. Nice smoke, good flavor.
When you order brisket they ask "Lean or Moist." Lean is firm and has the famous pink ring. Moist is fatty, juicy and tender. Both are good, but I prefer moist.
The wood used for the barbecue, post oak.
