The secret to the tradition Chicago Italian Beef Sandwich is the hot pepper giardinara mix.  Max has buckets of it on the counter so you can add your own.  And you'll be loading it on.  Max's has the best giardinara I've found in Chicago.  I think it's all the garlic.
