Nicki, Chef-Owner of the Jamaican Jerk Hut, graduated from
the Culinary Institute. Her last position before
opening the Jerk Hut was in the kitchen at Philadelphia's
Four Seasons Hotel. Quite a change from the grandeur
of the Four Seasons.
Jerk
grilled chicken, pork, shrimp and snapper with an extra
kick of hot. For the more meek of palate, sweet and
sour chicken, Dunn's River BBQ Chicken and Negril Garlic
Shrimp. I'm a big fan of Niki's curries, especially
the Curry Shrimp. For starters, Beef, Chicken or
Vegetable Patties - warm, filled turnovers. The
sides are great too. Jamaican Cabbage, Jasmine Rice
and Fried Plantains. Desserts, all home baked.
The pound cakes, either coconut or lemon, are especially
recommended.
