Cochinita Pibil is
a Sunday Morning tradition throughout the Yucatan.
Pork is marinated in citrus juice and annatto seed (for
color) and slow roasted over night. On Sunday
Morning, all over Isla, are giant roasting pans on
roadside counters. It doesn't last long and is
well worth rising early to pursue.
Colonia La Gloria's
public market is one stop shopping on Sunday Morning.
The butcher for the cocinita pibil, the Tortilla bakery
for fresh tortillas and the produce stand for a bottle
of fresh squeezed orange juice.
Cochinita Pibil is
sold by the kilogram or fraction thereof. I have
to learn the metric system. Half a kilo seems to
be a whole lot more than half a pound. Next time
I'll be going for a quarter kilo. This week I will
be eating pork well into Wednesday.
