Competition ready and award winning ribs.  And the best greens I have ever wolfed down.

The desk clerk at my motel foretold a dismal dinner.  The choice was between fast food restaurants and chain casual restaurants. I feared Cracker Barrel was in my future.

No way would I be so easily defeated.  Searching the Horse Cave KY area, I luckily happened upon Big Bubba Bucks Belly Bustin Bliss BBQ.  The name scared me.  Iteration often does. But I headed north an exit on I-65.

Bubba Bucks serves barbecue at its best.  The ribs were perfectly smoked - the smokers are out side.  Tender without falling off the bone. The mild sauce packed with generations of fiddling. 

The greens.  I slurped up the juices.  So rich and flavorful.  A few chunks of meat - pork browns I think.  The other side, fresh fried squash, high addictive.  Home made peach cobbler for dessert.

We civilians enter through the front door. The back door is far more busy.  Truckers, park their rigs in the back. Order at the counter. Grab a seat at one of the communal tables.  Sit back in anticipations of some of the best barbecued ribs anywhere.
